How the line gets there
Each letter is followed by a combining character — U+0336 for the strikethrough, U+0338 for the slash, U+0334 for the wavy line, U+0332 and U+0333 for the underlines, U+0305 for the overline. Apps draw the mark over or under the letter before it, so the text looks crossed out wherever you paste it.
Built-in strikethrough, where apps have it
Discord: ~~text~~. WhatsApp and Slack: ~text~. Telegram: ~~text~~ in the desktop apps, or select the text and pick Strikethrough from the formatting menu. Google Docs: Alt+Shift+5, or Command+Shift+X on a Mac. Where an app has its own, use it — it is shorter and screen readers understand it. Everywhere else, copy it from here.
